Introduction DugzaPig is a new competitive barbecue team that has risen out of some charcoal ashes in St. Andrews, Manitoba. The joy of cooking “low and slow” and being able to taste the results of your efforts is hard to describe. Explaining the “low and slow” cooking process to different individuals usually results in lengthy discussions regarding different cooking techniques for barbecue. Once you’ve informed family and friends that you are entering a barbecue competition, you suddenly have a few more “helpers” (or is that tasters?). DugzaPig travels around Manitoba, Saskatchewan and into the United States competing in real barbecue competitions. The only gas in these competitions is in the beans! Doug, owner of DugzaPig, started out with a gas barbecue, but through television and the internet, discovered the art of charcoal and “low and slow” southern style barbecue. Doug met “Smokin’ Jim” through the Prairie BBQ Association and was introduced to competitive barbecue when he shadowed Smokin’ Jim at a competitive cook at Cabella’s in Grand Forks, ND. The following year, Doug was Smokin’ Jim’s assistant at the Morden Corn & Apple Festival BBQ Competition in Morden, MB. One year later he entered his own team at the same competition. Competition barbecue is an enjoyable but expensive hobby. Dugzapig is always looking for a great sponsor to help out.
